Peach Salsa with Jicama Chips

Ingredients
3 peaches
2 medium heirloom tomatoes, deseeded
1 jalapeño
1/4 cup minced cilantro
1 medium red onion
3 large jicama roots, peeled and sliced into thick strips for dipping
Juice of 5 limes
Sea salt and black pepper to taste
Instructions
Wash and pat dry peaches, tomatoes, jalapeño, cilantro, and onion.
Chop peaches and tomatoes.
Mince jalapeño, cilantro, and onion.
Combine all ingredients in a large bowl and mix well.
Transfer to a container or glass jar and refrigerate for at least 15 minutes to allow flavors to combine.
Peel and thinly slice jicama root to use for dipping.
When ready to serve, squeeze lime over salsa and add salt and pepper to taste.
