Protein Bowl

Ingredients:
1 cup firm tofu, air-fried
2 tablespoons olive oil
½ cup cooked quinoa
½ cup roasted sweet potatoes
1 cup diced bell pepper
2 tablespoons crumbled feta
2 tablespoons fresh parsley, minced
1 tablespoon fresh sage, minced
Instructions:
Pre-heat air fryer for three minutes. Dice tofu into small cubes and toss in one tablespoon of olive oil and whatever dried spice you like. Personally, I love curry, turmeric, etc.. Reserve the second tablespoon for tossing later.
Cook tofu on Air Roast for 15 minutes.
Combine cooked tofu, quinoa, sweet potatoes, bell pepper, feta, parsley, and sage in a bowl and toss with olive oil.
