Crockpot Veggie Chili

Ingredients:

  • 14.5 oz can fire-roasted tomatoes in tomato juice

  • 14.5 oz can whole kernel corn, rinsed and drained well

  • 15 oz can black beans, rinsed and drained well

  • 15.5 oz can kidney beans, rinsed and drained well

  • 12 oz soyrizo chorizo

  • 1 cup low sodium chicken broth

  • ½ red onion, diced

  • 1-2 cloves garlic, minced

  • 2 tablespoons chili powder

  • 1 teaspoon cumin

  • ¼ - ½ teaspoon cayenne pepper (optional for added heat)

  • ½ teaspoon onion powder

  • 1 teaspoon oregano

  • ¼ teaspoon black pepper

  • 1 teaspoon paprika

Instructions:

  1. Put all ingredients in a crock pot and stir until combined well.

  2. Time is up to you but I like to cook for at least four hours. 

  3. To make it even more yummy, feel free to add toppings like yogurt, grated cheese, avocado, or cilantro.
